Sue Zig's Cucumber Appetizer

Cucumber Appetizer

This recipe originally came from my friend Sue Ziegler. She will note some minor changes but it is always a crowd pleaser. Especially a good recipe for showers, teas, etc.

The photo was provided by Katie Roberts with her personal touch. She used bagel chips!!

  • 1 cucumber (peel and slice into rounds)
  • 8 oz. cream cheese
  • 1 cup of mayo
  • 1 pkg dry Italian salad dressing (like Good Seasons)
  • 8 oz. sour cream
  • cocktail bread (the cute little loaves)
  • also has been made with bagel bites and bread cut with cookie cutters
  • dried dill weed
Combine cream cheese, mayo, and sour cream. Stir in the dry salad dressing a little at a time until it reaches your desired taste level. Spread this creamy mix on the bread, top with a cucumber round and sprinkle with dill weed.
Note this recipe makes a lot of creamy spread. You may want to have extra ingredients on hand to make more if you are expecting a crowd or use the remainder as a dip. (Two appetizers in one).
