Zucchini Ribbon Salad



I just received this recipe at Publix. They were sampling and it was so good I bought the ingredients to make it for dinner. It is delicious and a great change of pace from the everyday green salad.

(serves 4)

1/2 cup diced tomatoes
1/2 cup matchstick carrots
1/3 cup sliced green onions
1/4 cup Publix balsamic vinaigrette
1 tablespoon Gourmet Garden basil paste
1/4 cup crumbled blue cheese (feta would be a good alternative)
2 medium zucchinis

Cut zucchinis into 3 - 4 inch sections and use a vegetable peeler to cut into thin lengthwise strip. (Stop when you reach the seeds and discard core).

Stir together the vinaigrette and basil paste.

In a serving bowl combine zucchini and remaining ingredients. Toss with the vinaigrette mixture and serve or keep refrigerated until ready to serve.
