Tomatoe Tart (or quick pizza)


This is so easy and fun!! You'll like it. Play with the toppings!!

- 9 " pie crust (ready made makes it easy)
- 3 Tomatoes (sliced 1/4 " thick
- 1 package of Mozzarella Cheese (sliced 1/4" thick)
- olive oil
- kosher salt
- pepper
- red pepper flakes

Roll the pie crust out to about 10". Place on a prepared baking sheet or cooking stone.
Leaving a 1" border circle the tomato slices alternating with the cheese around the crust. (overlap the cheese and tomato).
In the center place one tomato slice with a cheese slice on top.
Fold up the one inch border pleated it as you go.
Brush olive oil on the crust and then over all the tomato/cheese.
Sprinkle over the pie salt, pepper and the red pepper flakes.
Bake at 375 degrees for 35 minutes or until the crust bottom has browned.
