Corn Casserole


This is a tasty side dish and a welcomed alternative to the cornbread casserole. I think you'll like it. We do!!

Serves 4

1 - 16 oz. can whole kernel corn
1 - 5 oz. can evaporated milk
1 cup shredded Swiss cheese
2 beaten eggs
2 tablespoons finely chopped onion (optional)
1 cup soft bread crumbs
2 tablespoons melted butter
dash of black pepper

Combine corn, milk, 3/4 cup of the cheese, eggs, onion, and a dash of black pepper. Put in a casserole dish. Combine bread crumbs, butter, and remaining cheese. Sprinkle the bread mixture over the casserole.

Bake at 350 degrees for 25 - 30 minutes

I just thought this may be good with a dash of cayenne pepper. I think 'll try it next time!!
