This delicious cranberry cake makes a good coffee cake for brunch or a great cookie bar.
During the holidays I stock up on fresh cranberries just for this recipe. Cranberries freeze great and can be used frozen.
This is an easy dish to throw together. I received the delightful recipe from Tootsie Beck.
Ingredients:
2 eggs
1 cup sugar
1 cup flour
1/3 cup melted butter
1 1/4 cup fresh cranberries
1/2 cup chopped nuts (I use pecans)
In a mixing bowl beat together by hand the sugar and eggs.
By hand stir in the flour and melted butter.
Finally stir in the cranberries and nuts.
This will be a thicker dough.
Spread the dough in an 8" x 8" pan.
Bake at 350 degrees for 25 - 30 minutes.
