Apple Ginger Spice Cake


Fall always makes me hungry for apples and ginger bread. This recipe answers both cravings! It is so light it can be used for a coffee cake too!

1 - 14.5 oz ginger bread cake mix
1 - 21 oz. can apple pie filling
2 - large eggs
1/4 cup flour
1 teaspoon almond extract
1 cup powdered sugar
1/4 cup sour cream

Preheat the oven to 350 degrees. In a mixing bowl combine by hand the first 5 ingredients. Spray a 9" x 13" baking dish with cooking spray. Spread this thick batter evenly into the prepared dish and cook 20 minutes or until when a toothpick is inserted it comes out clean.
Cool on a rack in the baking dish. Meanwhile whisk together the powdered sugar and the sour cream. While the cake is still hot pour the sour cream/powdered sugar icing over the cake.
You can serve hot or allow to cool.
