Pork Chops with Savory Apple Compote

 The stories behind some recipes are more interesting than others. 
This recipe was the result of picking up the wrong items at the grocery store 
and visiting the web site to get a recipe to utilize the mistake. This time it 
paid off!
 
2  Tbsp. olive oil
4  center cut pork chops, about 1-inch thick  or  2 pork steaks 
1  small  onion, thinly sliced
1  (21 oz. can) Comstock sliced apples 
1 cup hard apple cider
2  Tbsp. vinegar
1/2 tsp. salt
1/4 tsp. black pepper 
 
1. Preheat oven to 350°F. Heat olive oil in a large skillet over 
MEDIUM-HIGH heat.
2. Add pork  and cook until browned, about 3 minutes per side. 
Remove pork from skillet and transfer to an oven safe baking dish.
3. Add onion to skillet and cook, stirring, until soft, about 5 
minutes. Remove skillet from heat.
4. Stir in apples, apple cider, vinegar, salt and 
pepper until well combined with the onions. Pour apple compote over 
pork chops.
5. Cover baking dish with foil and bake for 40 to 45 minutes or until pork is tender.
