I received this recipe from my good friend Jessica Chapman. Jessica brought the dish to church and instantly won me over to grits. Give it a try. I think it will win you over too!
6 cups chicken broth
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
2 cups regular grits (not instant)
16 oz. cubed cheddar cheese
1/2 cup milk
4 large eggs
1/2 cup unsalted butter
8 oz. grated sharp white cheddar
Preheat oven to 350 degrees.
Spray a 4 qt. casserole with cooking spray.
Bring the broth to a boil with salt, pepper and garlic powder in a sauce pan.
Stir in the grits whisking until completely combined.
Reduce heat to low and simmer until grits are thick (8 - 10 minutes).
Add cubed cheddar and milk to grits - stir.
Gradually stir in the eggs and butter.Continue to stir until all is combined.
Pour into the prepared casserole dish.
Sprinkle with the white cheddar cheese.
Bake 35 -40 minutes or until set.
