Hash Brown Casserole

This is a great dish for a crowd. Versatile enough for breakfast, lunch or dinner.

32 oz frozen hash browns (thawed)
3/4 cup melted butter
1/2 cup chopped onions
1 can cream of chicken soup
8 oz. sour cream
1 cup shredded cheddar cheese
2 cup crushed corn flakes (optional)

Combine everything except cornflakes.
Place mixture in a baking dish.
Top with corn flakes,
Bake at 350 degrees for 50 minutes.

There are limitless options to this recipe.
  • make with or with out the corn flake topping.
  • swap corn flakes for crushed Doritos or tortilla chips.
  • exchange the  cream of chicken soup for nacho cheese, cheddar cheese, cream of mushroom or cream of celery soup. (Susie even used ranch dressing once.)
  • substitute a different cheese for the cheddar.
