Oven Baked Salmon


The usual method of grilling our salmon just couldn't be done today so we tried a new approach and I must admit it was a success. The reason I am tempted to not admit it is that the grill and salmon is usually Rich's territory and source of bragging rights but what can I say ... except this was really good!

Salmon Fillets
Butter
Progresso Italian Bread Crumbs
Salt
Pepper

On the stove top melt a tablespoon or two of butter in an oven proof skillet.
Sear the salmon on one side (or the skinless side).
Melt another tablespoon or two of butter and mix with enough bread crumbs to cover your fish.
Flip the filets, sprinkle with salt and pepper, cover with bread crumbs and place in a 400 degree oven until fish is done (6 -10 minutes depending on the thickness of the fish).
