Cheese Steak Sandwiches

Yes, these were very tasty. If you like Cheese Steak Sandwiches I believe you will like these but, I have never been to Philadelphia so I can't attest to the authenticity. I guess we will call them "Tampa Cheese Steak Sandwiches" although I would think I would have to use Cuban bread to achieve that title!

These quantities make three "healthy" sandwiches!

  • 3 hoagie rolls
  • onions sliced, thick
  • 4 oz. fresh mushrooms
  • 3/4 pound rib eye steak, diced
  • salt
  • pepper
  • 6 slices provolone cheese
  • butter

Preheat oven to 250 degrees.
Slice rolls and have individual pieces of foil ready before starting.
In a nonstick skillet melt 1 tablespoon of butter and cook onions and mushrooms until tender (between 5 - 8 minutes). Remove from skillet. If you like green peppers you can add these too but we aren't crazy about them and do not include.
Add another tablespoon of butter to the skillet and cook cubed steak, seasoned with salt and pepper until no longer pink.
Return the cooked veggies to the skillet and cook about 2 minutes with the meat.
Divide the meat mixture into three sections. Top each section of meat with 2 slices of cheese and allow to melt.
I like to gently mix the cheese into the meat but you could leave on top if you wish.
Bring the buns to the skillet one at a time and transfer meat to the roll and lay the roll on it's foil.
Roll the sandwiches tightly in the foil.
Transfer sandwiches to the preheated oven and allow to heat 10 -15 minutes!
