Chicken Cordon Blue and Hollandaise Sauce


Rich has included this recipe in his favorites for years! I don't remember where the recipe came from but I'm glad to have found it.

1 boneless, skinless chicken breast per serving
eggs
Italian bread crumbs, like Progresso
1 slice Swiss cheese per serving
1 slice deli ham per serving

Preheat oven to 350 degrees.

Pound the chicken breast flat .
Place 1 slice of ham and 1 slice of cheese on each chicken breast.
Fold over or roll up the chicken breast.
Put the egg in a shallow dish and beat lightly.
Place some bead crumbs in a second shallow dish.
Dip chicken in egg and then in bread crumbs coating the servings completely.
Optional step: Brown each serving in a small amount of oil in a skillet. This step will produce a more golden look to the finished product.
Place chicken breasts in an oven proof baking dish and bake for 30 -40 minutes.


These may be served as is or with chicken gravy or with a hollandaise sauce.

Hollandaise Sauce:

2 egg yolks
1 tablespoon lemon juice
1/2 cup melted butter
a dash of salt

In a double boiler whisk together yolks and lemon juice. Add melted butter and salt. Cook until the mixture thickens.
