Joanne's 83rd Birthday Cake



This Easter we had a double celebration that included my mother, Joanne's, 83rd birthday.
This was the birthday cake. The actual cake was a red velvet cake mix and the icing was cream cheese frosting colored blue with food coloring in between the layers and for decorating. The recipe for the chocolate frosting is listed below.


The chocolate icing was a simple:

1 cup heavy cream
1/2 cup semi sweet chocolate chips

Heat cream but do not allow to boil.
Add chips and let sit 3- 5 minutes to soften.
Stir the mixture until smooth.
Spoon icing over cake.
(This 2 layer cake required doubling the recipe.)

Two helpful hints:

Place cake on serving platter prior to icing.
Slide pieces of wax paper under the edges of the cake to protect plate from the icing the will drip down.

This is a nest cake ... I saw a similar cake on Pinterest.
The nest is a chocolate bar shaved with a potato peeler.
The eggs are just candy eggs available at Easter.
