Crab Cakes
Last night my planned meal had not defrosted. Ugh I know you've been there. This is a great pantry recipe when you use the canned crab meat. It's a life saver. Well maybe that's a little dramatic. It's a dinner saver!!
1 pound canned or cooked crab meat (drained)
2- 2 1/2 cups soft bread crumbs
1 egg (lightly beaten)
3/4 cup mayo
1/3 cup each chopped celery, onion, and green pepper
1 tablespoon seafood seasoning (Old Bay)
2 teaspoons lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
1/4 teaspoon black pepper
1/8 teaspoon hot pepper sauce (Crystal)
2 - 4 tablespoons butter or vegetable oil
- Combine the crab, bread crumbs, egg, mayo, veggies and seasonings. (Rich isn't wild about green pepper so I left it out.)
- Shape into 8 patties - although you can make smaller if you are doing appetizers.
- Broil or pan fry about 4 minutes per side, until golden brown.
