Stuffed Meatloaf


This is one of very few recipes I have from my grandmother. She was a great cook I was just to young to have collected many of her recipes. If any of my relatives have any I'd love to have more. This week I made this recipe for dinner and as usual we were pleased with the unique mushroom stuffing.
  • 1 pound of ground beef
  • 1 pound of ground pork
  • 1 cup of dry bread crumbs
  • 1/2 cup grated carrots
  • 1/4 cup finely chopped onion
  • 2 eggs, beat slightly
  • 1/2 cup of milk
  • 2 teaspoons salt
  • 1 teaspoon Worcestershire Sauce
  • 1/8 teaspoon black pepper
Lightly mix the above ingredients and place on a double thickness of foil. Shape into a 14" x 8" rectangle.
  • 2 tablespoons butter
  • 4 oz can of sliced mushrooms
  • 1 tablespoon chopped onion
Combine the above ingredients in a pan and saute until onions are tender. Then mix thoroughly with the following:

  • 2 cups of soft bread crumbs
  • 1/4 teaspoon salt
  • 1/2 teaspoon poultry seasoning
Spread the stuffing over meat and then roll it up pressing together and sealing the over lapping edges of the foil.
Bake at 375 degrees for one hour then open the foil and bake another 15 minutes.
