Stuffed Mushrooms

This was a recipe I made before Rich and I were married. I got it from a "Jazzercise" cookbook made by the leaders. I didn't do much cooking before I was married so it is unusual. It must have been good, 27 years later we're still together and making the same stuffed mushrooms.

  • 1- 2 pound of fresh mushrooms
  • 1 cup of Progresso Italian Bread crumbs (0r similar)
  • 1/2 cup shredded Swiss cheese
  • 1/4 cup melted butter
  • 2 tablespoons minced onions
  • 1/2 teaspoon salt
  • dash of pepper
Clean mushrooms by wiping with a dry paper towel.
Remove stems of mushrooms and chop the stems, reserving the caps.
Mix the chopped stems with the remaining ingredients.
Stuff the mushroom caps with the mixture. Bake the stuffed caps by broiling for 5 minutes or until browned.
