Outback Chicken


This is similar to the Outback version. I received the recipe from "Sweet Jeanette's" blog. Try it I think you'll agree it is great!!

  • 4 boneless chicken breasts
  • 1/2 - 1 teaspoon seasoning salt
  • 6 slices of bacon (cut in half)
  • 1/4 cup Dijon mustard
  • 1/2 cup honey
  • 1 1/2 teaspoon dried onion flakes
  • 2 tablespoon mayonnaise (not Miracle Whip)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced fresh mushrooms
Pound chicken to 1/2 inch thick, sprnkle both sides with seasoning salt an refrigerate 30 minutes.
Cook bacon until crisp. (Suggest cooking by lining a baking sheet with foil, placing a rack on the foil and laying bacon on rack. Bake at 450 degrees until crisp.-save drippings)
Make a sauce by combining mustard, honey, onion , and mayo until smooth.
Preheat oven to 350 degrees.
Transfer drippings to a skillet. Brown chicken breasts in drippings ( 3 - 5 minutes per side).
Place chicken in baking dish. Top each breast with bacon, mushrooms, sauce and top with cheese. Bake 15- 20 minutes or until juices run clear.
