Marinated Tomato and Artichoke Salad


New salad ... great taste and easy to adjust large to small.

Tomatoes cut in thin wedges (about 1 tomato per 2 people - depending on size of tomatoes
salt
pepper
marinated artichokes, drained (used a 4 oz jar for the two of us)
2 table spoons balsamic vinegar
2 cloves of garlic, minced
Feta cheese, crumbles
Optional - sliced black olives, drained

Arranged tomato on serving plate and sprinkle with salt and pepper.
In a separate bowl combined artichokes, garlic, and vinegar (also olives if using).
Spoon over the tomatoes and save just a drizzle of the dressing.
Top with feta cheese and drizzle with the remaining dressing.
