This week I had left over chicken from "Beer Can Chicken". You can make this recipe with left over chicken or start fresh with raw chicken. Enjoy!!
2 cups of chicken (bite size pieces)
1/2 cup butter or margarine
3/4 cup sliced mushrooms (fresh, canned or frozen)
1 clove minced garlic
1/4 cup apple juice (or white wine)
1/2 cup grated Parmesan cheese
2/3 cup milk
dash of pepper
8 oz. pasta (bow tie or your choice)cooked
In a skillet melt 2 tablespoons of butter. Add chicken, mushrooms, and garlic. Cook until chicken is done (or warm if using left overs).
Add apple juice and cook stirring for 3 minutes.
Remove everything from skillet.
Melt the remaining 6 tablespoons of the butter. Add the cheese, milk and pepper.Cook until cheese melts and sauce is smooth. Add chicken mixture back to the sauce. Toss with the cooked pasta and serve!!
