If you like black beans you'll like this salad I received from Cindee Alvarez. It's an easy salad to throw together and due to the oil based dressing great for picnics or parties.
3 - 15 oz cans of black beans (drained and rinsed)
1 - 15 oz can of whole kernel corn (drained)
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped onion
3 tablespoons lime juice
1/4 cup vinegar
3/4 cup oil
1 tablespoon chopped fresh cilantro
1/2 teaspoon dried cumin
Optional chopped jalapeno (I've never tried!)
In a jar with a lid or whisk together in a small bowl oil, vinegar, cilantro, cumin, and lime juice to create a dressing.
Combine the black beans, corn, peppers and onion in a serving bowl and top with the dressing. Toss and serve.
You can make the salad in advance and store in the refrigerator.
