Beef Stroganoff


This was a recipe I began cooking as a young bride! Rich liked it then and still likes it now! I like to serve it over egg noodles and with peas!!
I've tested different cuts of beef but recently I have found Publix carrying round steak sliced for fajitas and it is really good!


(serves 2 - 3)

- 1 pound bite size beef
- 3 tablespoons vegetable oil
- 1 1/2 cups sliced mushrooms fresh or frozen
- 1/2 cup sherry
- 1/4 beef broth
- 1 cup sour cream
- 1/2 teaspoon salt
- hot cooked egg noodles

Heat oil in a skillet, add meat and brown quickly. Remove meat from pan, leaving drippings.
Place mushrooms in drippings in the skillet and cook 2 - 3 minutes. Remove mushrooms from pan, leaving drippings. Add sherry and broth to drippings and allow to boil until liquid reduces to about 1/3 cup. Remove pan from heat stir in sour cream and salt then add the meat and mushrooms stirring until coated. Serve with noodles.
