Sausage Stuffing

I know this recipe goes back at least three generations. It has graced holiday tables of our family for over 80 years. Everyone in our family loves it so I always double the recipe.

For a twelve pound turkey:

12 cups white bread - cubed
1 cup of stick margarine - melted
3/4 cup minced onion
1 1/2 cup minced celery
1 teaspoon black pepper
1 tablespoon dried sage, thyme, or margoram
2 teaspoon poultry seasoning
1/2 pound of sausage (like the rolls for breakfast)

In a skillet cook the sausage until no longer pink.
In a large bowl combine the sausage and remaining ingredients - stirring to mix.
Place stuffing in the turkey, but not until you are ready to bake.
Bake the appropriate time for a stuffed turkey.
If all the stuffing does not fit in turkey but extra in a casserole dish and store in refrigerator until half hour to forty five minutes of baking time.
When turkey is done combine and stir together the stuffing in the casserole and the stuffing in the bird!
