Jill's Savory Chicken


My sister Jill prepared this chicken dish for me when she was first married. It is a great chicken option! The preparation is quick and easy. The Dijon mustard and capers give the dish a unique, savory taste.

1 pound boneless chicken breasts, slice into bite size pieces
2 tablespoons oil
1/3 cup chopped onion
1 clove garlic minced
5 oz white wine (or apple juice)
5 oz chicken broth
2 tablespoons Dijon mustard
1 teaspoon corn starch
2 teaspoon capers
salt and pepper

Put half of the oil in a skillet.
Brown chicken in heated oil.
Season to taste with salt and pepper.
Remove chicken from pan.
Saute garlic and onions in the drippings along with the remaining oil.
Add wine/apple juice and cook to reduce slightly.
In the meantime, thoroughly mix corn starch into chicken broth.
Add broth mixture to pan.
Add mustard, capers and salt/pepper if needed.
Spoon over chicken and serve.
