Lipton Onion Chicken

Not in the mood? Here is an easy recipe for those days. Just throw it in the pan and let it simmer 45 minutes! I should call it "throw it together" chicken. This recipe worked really well when the boys were young and we were working on homework.

2 tablespoons oil
3 pounds chicken pieces
14 1/2 oz. can of tomatoes - chopped and drained (reserve the liquid)
1 envelope dry onion soup
1/3 cup water

In a skillet brown the chicken in oil.
In a desperate bowl blend together the soup mix, the water and the reserved liquid from the tomatoes.
Add to the skillet.
Add chopped tomatoes to the skillet.
Simmer covered for 45 minutes.
Stir occasionally.
