Joanne's Swiss Steak
My mother made this recipe hundreds of times over the years. t was a "go to recipe" when she had company coming and she neede a crock pot dinner.
1 medium onion sliced thin
4 ounces (1 1/2 cups) sliced mushrooms
2 1/2 pound round steak (cut into several pieces)
1 - 10 3/4 oz can of cream of mushroom soup
2 tablespoons tomato paste
2 tablespoons sherry
1/2 cup shredded Swiss cheese
Put onions and mushrooms in the bottom of a crock pot. Place meat in pot next. Top with soup, sherry and 1 tablespoon of tomato paste.Cook 8 -12 hours on low.
Fifteen minutes prior to serving skim the fat and whisk in remaining tomato paste and sprinkle with cheese.
