Veal and Mozzarella Bundles


This dish is really rather quick and easy. It definitely looks harder than it is!!
My dear friend Rhonda found this special recipe and I am sure glad she shared it.
Per Rhonda you can freeze these prepared bundles for a quick freezer meal.
We have yet to have any left over to try it!!

veal - thinly sliced medallions
mozzarella cheese (either sliced or shredded)
flour seasoned with salt and pepper
1 cup chicken broth
1 cup Half and Half
1 cup sliced mushrooms
garlic - minced
butter and olive oil

Heat butter and oil in a skillet.
Lay veal medallion flat and top with cheeses.
Roll up and coat with the seasoned flour.
Toothpicks are optional but I find they keep the bundles rolled up while cooking.
Brown bundles in skillet.
Place on a baking sheet in a preheated (350 degree) oven.
Meanwhile combine garlic and mushrooms in a saucepan.
Add Half and Half, broth, and season with salt and pepper.
Simmer until thickens a little (about 10 minutes).

Want to get fancy? Saute some fresh asparagus spears and place one in each bundle at the same time you are placing the cheese.
