The hunt to replicate a vegetable salad I ate at a local restaurant led me to try this recipe. It isn't the salad I was looking for but it is good. I served it for the Bunko girls and several asked for the recipe so it must be good!!
1 pint of cherry tomatoes - halved
1 medium zucchini - cubed
1 medium yellow squash - cubed
1 medium cucumber - cubed
1 each yellow, red, and green pepper - cubed
16 oz. can of black olives - drained and sliced
1 small onion - chopped
1/2 - 3/4 cup Italian salad dressing
Combine all the ingredients and marinade over night.
