Pineapple Ginger Pork Roast

I really like pork roast and this recipe I found in a local charity fund raising cookbook did not disappoint. I used to be able to find a sliced pork roast at Albertson's but they stopped offering it. Now I use a regular pork roast and it is still good!

1 Pork Roast
salt
pepper
1/2 cup brown sugar
2 tablespoons corn starch
1/4 teaspoon ground ginger
21 oz can chunk pineapple
2 tablespoons lemon juice
1/2 cup sherry

Preheat oven to 350 degrees.
Season the pork with salt and pepper.
Place pork roast in a roasting pan fat side up.
Bake 35 - 45 minutes per pound.
In a saucepan combine sugar, cornstarch and ginger.
Add remaining ingredients to the saucepan and bring to a boil.
When there is 15 minutes left in cooking time drain the drippings from the roasting pan and add sauce. Return to oven for 15 minutes. Serve the roast with the sauce.
