Sweet and Sour Meat Loaf





I really like the flavors in this meatloaf. The sweet and sour sauce makes it feel special. I like to serve it with boiled potatoes and use the sauce as a gravy!! This recipe was given to me in the 80's by a work friend, Cathy Cullens. Not only has it survived the years but has also blessed us with many delicious meals.

Serves 3.

Sauce:


8 oz. can of stewed tomatoes
4 tablespoons of brown sugar
2 tablespoons of vinegar
1/2 teaspoon of yellow mustard
3 tablespoons of celery (but if I have stewed tomatoes w/ celery I omit)

Meatloaf:
1 pound ground beef
1 egg, slightly beat
1/4 of a medium onion, minced
1/4 cup Pepperidge Farm Corn Bread Dressing
1 tablespoon of the above sauce
1/2 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon black pepper

Preheat oven to 350 degrees.
Combine all the sauce ingredients in a saucepan and simmer until sugar dissolves.
Combine the meatloaf ingredients, mixing lightly will produce a lighter meatloaf.
Place meat in a loaf pan. Pour a 1/4 cup of the sauce over the meatloaf. Bake uncovered for an hour. Remove sauce from the heat until the end of the baking time and just reheat it.Serve the meatloaf with sauce poured over it!!
