Tomatoe Canapes

The original recipe for this appetizer came from Paula Deen's website. I have a tendency to adapt recipes to my style so I'm not sure if this recipe has been adjusted or not. Paula is the creator and should receive the credit but your family will be the ones to benefit from the taste!

3/4 cup finely diced fresh tomatoes
2 teaspoons finely diced onions
1 teaspoon finely chopped fresh basil
a pinch of salt
a pinch of pepper
a pinch of garlic powder
1 package mini phyllo shells
1/2 cup shredded mozzarella cheese
1/4 cup mayonnaise
2 tablespoons real bacon bits


Preheat oven to 350 degrees.
Place chopped tomatoes in a colander and sprinkle with the onions, basil, salt, pepper, and garlic powder.
Toss the ingredients in the colander and allow to sit at  least 5 minutes to drain juices.
Fill with 1 teaspoon of tomato mixture in each shell.
Combine the mozzarella cheese and mayonnaise and "frost" each tart.
Finish the tarts by sprinkling each shell with bacon bits.
Bake 10 -12 minutes.

You may make these tarts before the party and refrigerate them until you are read to bake.
