I found a recipe on pinterest and tweaked it to our tastes. The reviews this evening were positive! The preparation was fairly easy and the results were great. This recipe will definitely grace the Greene table again!
2 -4 boneless, skinless chicken breasts (sliced lengthwise)
1/2 cup Italian Bread Crumbs
1/4 cup shredded Parmesan cheese
1/4 teaspoon black pepper
1/4 teaspoon kosher salt
1 tablespoon olive oil
1 egg (lightly beaten)
sliced or shredded mozzarella cheese (1 -2 cups)
1 jar marinara sauce
1/4 teaspoon of crushed red pepper flakes
1/4 teaspoon garlic powder
Place the tablespoon of olive oil in the bottom of the crock pot.
Combine the bread crumbs, Parmesan cheese, salt and pepper in a shallow bowl.
Place beaten egg in a separate shallow bowl.
Dip chicken in the egg then the crumb mixture coating both sides.
Place coated breasts in the bottom of the crock pot.
Top chicken with mozzarella cheese then marinara sauce.
Sprinkle over the sauce the pepper flakes and garlic powder.
Cover and cook until chicken is tender.
6 -7 hours on low
3 -4 hours on high
