Balsamic Pasta Salad with Tortellini



Another Pinterest find!!
As I have said many times, I love balsamic vinegar so my attraction to the recipe was no surprise.
Now that I have tried the dish, it will be a regular on my table.
The original recipe didn't specify which tortellini to use so I selected italian sausage but I am sure the other options will be tasty too! I am sure you could personalize this salad with the vegetables of your choice. The options are limitless.

dressing:
2/3 cup olive oil
1/3 cup balsamic vinegar
1 tablespoon Dijon mustard
1 clove minced garlic
pinch of salt
pinch of pepper

Salad:
1 pound tortellini (cooked)
1 red bell pepper - diced
1 cup broccoli - diced
1/2 cup frozen peas - thawed
1/2 cup onion - chopped
1/2 pint cherry tomatoes - diced
1/2 tablespoon dried dill
1/4 cup crumbled feta

Combine the dressing ingredients.
Combine the salad ingredients.
Dress salad with dressing right before serving!
