Air Frying has revolutionized much of our recipes. I was slow to utilize my air fryer but have recently made a concentrated effort which has resulted in a few recipes I am eager to share. This crab cake recipe is not only delicious but easy! I hope you enjoy.
Ingredients:
- 1 large egg
- 1/3 cup of mayonnaise
- 1/2 cup of diced red (or use a frozen option of mixed colors)
- 2 tablespoons of scallions or finely diced onion
- 2 tablespoons of lemon juice
- 2 teaspoons of Dijon mustard
- 2 teaspoons of Old Bay Seasoning
- kosher salt
- black pepper
- 1 pound of lump crab
- 3/4 cup of panko breadcrumbs
- cooking spray (like Pam)
- Whisk together the egg, mayo, bell pepper, scallions (onion), lemon juice, Dijon mustard, Old Bay seasoning, 1 teaspoon (or less) salt, and a dash of pepper.
- Gently fold in the crab and breadcrumbs.
- Cover mixture with plastic wrap and refrigerate a minimum of 30 minutes or maximum of one day.
- Preheat the air fryer to 350 degrees.
- Spray fryer basket (or better yet the disposable liner) with cooking spray.
- Divide crab mixture into 3 1/2" patties and place in basket.
- Spray the tops of the patties with cooking spray and cook until golden (about 8 minutes).
- Flip the patties. Spray tops with cooking spray and cook another 8 minutes.
Seve with your favorite sauce (ex. - hot sauce, tartar sauce, remoulade, cocktail sauce).
