Chicken Parm is a popular dish. Utilizing the air fryer makes it simple, quick and easy for smaller numbers. This recipe has quickly become a fan favorite in our house. Serves 2-4 but can be easily doubled for more or to have leftovers.
Ingredients:
- 2 boneless chicken breasts (halved and cut into cutlets)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons garlic powder
- 1/3 cup flour
- 2 eggs - beat lightly
- 1/2 cup panko breadcrumbs
- 1/2 cup Parmesan cheese
- 1 tablespoon dry Italian seasoning
- more parmesan cheese
- 1 cup jarred marinara
- 4 slices of mozzarella cheese
- cooking spray (like Pam)
- Preheat air fryer to 375 degrees.
- Season both sides of chicken with salt and pepper.
- Combine in a shallow dish number 1 - flour and garlic powder.
- In shallow dish number 2 - place beaten eggs.
- In a third shallow dish combine - breadcrumbs, 1/2 cup of the parmesan cheese and Italian seasoning.
- Dredge chicken in flour mixture then egg then panko mixture.
- Spray chicken with cooking spray and place in the basket treated with cooking spray (or preferably a disposable liner treated with cooking spray) in a single layer which may require batch cooking.
- Cook at 375 degrees for 6 minutes on each side (a total of 12 minutes). It is recommended to check the chicken with a thermometer at this point.
- Leave chicken in basket and spoon two tablespoons of sauce on each piece with a piece of cheese on top (about 3-5 minutes).
- Return basket to fryer and cook until golden and bubbly.
- Serve with parmesan cheese.
