Baked Pineapple


An old family recipe. I love it!!

  • 20 oz.can of crushed pineapple
  • 1 cup of sugar
  • 2 tablespoons of cornstarch
  • 1/4 cup of water
  • 2 eggs
  • ground cinnamon
  • butter
Combine cornstarch and water until cornstarch is thoroughly dissolved.
Add to cornstarch mixture the eggs and sugar stirring until combined.
Then mix in the pineapple.
Place mixture in an oven proof baking dish. Sprinkle the dish with cinnamon and dot top with small pieces of butter ... DO NOT STIR.
Place in an oven preheated to 350 degrees and bake one hour.
