Creole Chicken Soup

Today I used the left over chicken from yesterdays beer can chicken to make this soup. It was a new recipe and very good. Serves 2 -3 dinner portions.

  • 2 tablespoon vegetable oil
  • 1 cup chopped onion 1 cup chopped red bell pepper
  • 1 cup frozen whole kernel corn
  • 2 cloves of garlic, minced
  • 14,5 oz can diced tomatoes
  • 2 cups of chopped cocked chicken
  • 1 1/2 teaspoon creole seasoning
  • 32 oz. chicken broth
In a dutch oven heat oil over medium high heat. Saute onion, bell pepper, corn and garlic until tender. Stir in tomatoes and chicken. Sprinkle with seasoning and saute 2 minutes. Add broth and bring to a boil. Reduce heat and simmer 20 minutes.
