- 2 tablespoon vegetable oil
- 1 cup chopped onion 1 cup chopped red bell pepper
- 1 cup frozen whole kernel corn
- 2 cloves of garlic, minced
- 14,5 oz can diced tomatoes
- 2 cups of chopped cocked chicken
- 1 1/2 teaspoon creole seasoning
- 32 oz. chicken broth

Creole Chicken Soup
Today I used the left over chicken from yesterdays beer can chicken to make this soup. It was a new recipe and very good. Serves 2 -3 dinner portions.
