Apple Pie in a Goblet

This recipe debuted on Father's Day 2010. Rich loves apple pie but there was only going to be the four of us at dinner and I didn't really want to be tempted by left overs. The reviews were amazing on the new dessert.

3 large Granny Smith apples - peeled and coarsely chopped
1/4 cup sugar
1/4 cup water
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
12 crushed shortbread cookies
vanilla ice cream
whipped cream


Combine the apples, sugar, water, cinnamon and nutmeg in a saucepan.
Bring the mixture to a boil then reduce to a simmer and cook covered for 10 minutes.
Uncover the pan and cook another 10 minutes. Remove pan from the heat.

The recipe recommended assembling in large wine goblets. In each goblet start with a layer of 2 tablespoons of the cookies crumbs. Next place a generous layer of ice cream topped with 1/4 of the apples, a sprinkle of the crumbs and a dollop of whipped cream.
