A few years back I found this healthy recipe in a Weight Watchers' cookbook (4 points). It is really a great tasting option for boneless chicken breasts.
2 teaspoons vegetable oil
3 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
1 clove garlic, crushed
4 - 1/4" thick boneless, skinless, chicken breasts
2 cups mushrooms - halved
1/3 cup chicken broth
1/4 teaspoon dried thyme (crumbled)
Heat one teaspoon oil in a skillet.
As it heats combine in a bowl - two tablespoons balsamic vinegar, Dijon mustard, and garlic.
Add chicken to the bowl and turn to coat.
Add chicken with all the mustard, vinegar. garlic mixture to the skillet and cook until chicken is cooked through.
Remove chicken from skillet.
Add mushrooms - cook until browned.
Add broth, thyme, and the remaining teaspoon of oil and tablespoon of vinegar.
Heat about 2 minutes.
Serve over chicken.
