Pork Chop with Carmeilized Onions


Have a partner that likes to grill? While the pork chops are being grilled whip up the wonderful topping.
This light recipe utilizes one of my favorite flavors balsamic vinegar. I swear I would eat anything with balsamic vinegar but pair it with pork I am in heaven. This came from an old Weight Watcher's cook book. The points value was a reasonable seven points but with this flavor you won't guess it came from Weight Watcher's.


1/3 cup balsamic vinegar
1 tablespoon sugar
1/4 teaspoon salt
4 boneless pork chops
1 tablespoon olive oil
3 onions - halved and sliced thin
1 cup chicken broth
1 tablespoon flour
1/4 teaspoon pepper

Prepare marinade:
Combine half of the vinegar, half of the sugar, and all the salt.
Marinade the pork chops. (Note the longer the more flavor.)

Cook chops on the grill or broil.

In the meantime:
In a nonstick pan heat the oil, add onions and remaining sugar.
Saute the mixture about five minutes.
Add the broth and cook stirring until the liquid is almost evaporated (about 5 minutes).
Add vinegar, flour and pepper.
Cook, stirring, until onions are dark brown (about 10 minutes).

Serve with pork chops that have been broiled or cooked on the grill.
