Chocolate Crinkle Cookies

My mom has always been a cookie baker. This is a recipe she has made since I was a child. You will enjoy this soft, chocolaty cookie. One year I made it for the Christmas cookie exchange and it was well received!


1/2 cup corn oil
4 squares unsweetened chocolate - melted
2 cups sugar
4 eggs
2 teaspoons vanilla
1/2 teaspoon salt
2 cups flour
2 teaspoons baking powder
1 cup confectioner's sugar

Combine oil, chocolate and sugar. Add eggs one at a time until well blended. Add vanilla, salt. flour, and baking soda. Chill dough in refrigerator several hour or over night.
Preheat oven to 350 degrees. Roll dough into balls about the size of a walnut. Place confectioner's sugar in a bowl. Roll dough in confectioners sugar to coat balls. Place balls on a prepared cookie sheet at least 2 " a part. Bake 10 -12 minutes.
