Peanut Butter Cookies

You can make this recipe as plain peanut butter cookies or peanut butter blossoms (with chocolate kisses). They are a nice moist cookie and the kisses just make them better!!

1/2 cup butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar. packed
1 large egg
3/4 teaspoon vanilla
1 1/4 cup flour
3/4 teaspoon baking soda
1/4 teaspoon salt
chocolate kisses or heart shaped chocolates (optional)

Preheat oven to 375 degrees. In a large bowl beat together the butter, peanut butter, granulated sugar and 1/4 cup of the brown sugar* until light and fluffy. Add egg  and vanilla. In a second bowl combine flour, baking soda, and salt. Stir the flour mixture into the peanut butter mixture by hand until just combined. Sprinkle remaining brown sugar over dough and gently stir in. Roll dough into balls. Press the balls flat with the bottom of a glass to 1/4 inch thick and crisscross surface with a fork. Bake until light brown, 5 to 8 minutes. If you desire place chocolate kisses on top of the cookies immediately upon removing from oven. Cool on a rack.

* Do not panic if you put the whole 1/2 cup in it will still be good. I have done it many times. Just omit the step with the remaining brown sugar..
