This is a "go to" recipe. It can easily feed a group and I like to prepare if I am taking a meal to someone. You can prepare and have it ready to throw in the oven or you can prepare and cook immediately. Everyone seems to like it! The recipe as written serves eight but you can easily adjust.
8 boneless chicken breasts
8 slices Swiss cheese
1 can cream of chicken soup
1/4 cup apple juice or white wine
1 cup herb seasoned dry stuffing (Pepperridge Farms)
1/4 cup margarine or butter
Arrange chicken in a baking dish sprayed with cooking spray.
Top each breast with a slice of cheese.
Combine soup and apple juice (wine).
Spoon combination over the chicken.
Sprinkle with the stuffing.
Drizzle with melted butter.
Bake for 45 -55 minutes at 350 degrees.
