Honey Mustard Medallions
Quick and easy! The boys were very fond of this tangy dish.
spicy brown mustard
honey
crackers crumbs
Italian bread crumbs (like Progresso)
boneless chicken or pork
butter
oil
Slice meat into thin medallions.
Combine equal parts mustard and honey.
Coat medallions with honey mustard mixture.
Combine equal parts cracker and bread crumbs.
Coat chicken with crumb mixture.
Heat equal parts butter and oil in a skillet.
Pan fry until golden brown.
Although you could serve at this point, you will have a more tender dish if you transfer the chicken to a baking dish and bake at 350 degrees for 20 - 40 minutes.
