Lemon Squares

This recipe is not only easy but delicious. If you like lemon this bar cookie will be a favorite!

1 cup flour
1/2 cup butter
1/4 cup confectioner's sugar
2 eggs
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons lemon juice

Combine the flour, butter and sugar then press into the bottom of a square pan (approximately 9" x 9") to form a bottom crust. Bake 20 minutes at 350 degrees.
Combine the remaining ingredients and beat until fluffy/foamy.
Pour the lemon mixture over the hot crust and bake another 25 minutes.

You can make this a recipe for chocolate bars by decreasing the butter to 1/3 cup and replacing the lemon with one melted unsweetened chocolate square.
