Snickerdoodles Bottom Cookie |
Always an old time favorite. I can not tell you the first time I had these cookies. I can remember my mother preparing them when I was very small. Everyone should have this staple in their recipe box.
2 cups sugar (divided)
1 cup butter flavored shortening (or 1/2 cup butter & 1/2 cup shortening)
2 eggs
1 tablespoon milk
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
3/4 teaspoon salt
2 teaspoon cinnamon
Preheat oven to 400 degrees.
Combine 1/2 cup sugar, shortening, eggs and vanilla using an electric mixer.
In a separate bowl combine flour, cream of tartar, baking soda, and salt.
Slowly add dry ingredient mixture to batter while mixer is on low speed.
Only process until just combined.
In a small container stir together cinnamon and 1/2 cup sugar.
Shape dough into balls about the size of a walnut. Roll balls in sugar cinnamon.
Place balls on a prepared cookie sheet. Spacing an inch or so apart.
Bake 7 - 8 minutes.
Cool 2 minutes on baking sheet then move to a rack to cool.
