Spaghetti Squash Feta Salad

This is a great combination of flavors. Rhonda Rogers served this delicious selection and everyone was sold!!

1 large spaghetti squash
1 onion - chopped
1 garlic clove - minced
2 tablespoons vegetable oil
1 1/2 cups chopped tomatoes
2 tablespoons fresh basil - chopped
3/4 cup crumbled feta cheese
3 tablespoons sliced black olives

Cut squash in half lengthwise and scoop out seeds.
Place squash on a baking sheet cut side down.
Bake at 350 degrees 45 minutes then flip squash and cook until tender.
Let cool.

Heat oil over medium heat and saute onion until tender.
Add garlic and saute 2 - 3 more minutes.
Add tomatoes and cook until warm

Rake out the meat portion of squash with a fork discarding the skin.
Toss all ingredients together!
