This simple Asian inspired dish is refreshing and compliments any meal as a light alternative.

1 thinly sliced cucumber
1/2 cup sliced onion
1/3 cup rice wine vinegar
1/4 tsp pepper
- Combine ingredients and serve.
- Can store refrigerated 2 - 3 hours.
